Diabetic-friendly Pear and Raspberry Crumble

Ingredients

  • 6 Pears- peeled, chopped
  • 1 cup Water
  • 1 Cinnamon Stick
  • 1 tbsp Raw Sugar
  • 1 cup Frozen Raspberries

Crumble Topping

  • 2 tbsp Plain Flour
  • 2 tbsp Plain Flour
  • 1/3 cup Chopped Raw Almonds
  • 1/4 cup Coconut
  • 1/4 cup Raw Sugar
  • 2 tbsp Low Fat Table Spread
  • 1 tsp Vanilla Extract

Method

  1. Preheat oven to 200˚C (180˚C fan forced). Lightly grease 4 individual ovenproof dishes (about 1 cup capacity each) or a 4-6 cup capacity ovenproof dish.
  2. Combine pears, water, cinnamon stick and sugar in a medium saucepan. Bring to the boil, reduce heat and cook, covered, for 8-10 minutes, or until pears are tender and any remaining liquid is syrupy. Remove from heat and scatter raspberries over the top. (Don’t stir too much or raspberries will colour the pears too much). Divide mixture between the dishes.
  3. Combine crumble topping together in a bowl and rub through butter and vanilla until mixture is well combined and clumpy. Scatter over fruit. Bake for 15 minutes, or until golden. Serve with low fat plain yogurt.
